Chocolate Banana Buttermilk Cake

Yes, I did a terrible job putting the glaze on…promise I’ll do it properly next time I bake it!

I cut out this recipe a long time ago from a Magazine but never baked it, mainly because it requires buttermilk and we almost never have any on hand.  Well, I had some left over from a recipe a little while back and had a craving for some chocolate, so figured I’d kill two birds with one stone…

Ingredients:

Not in picture – Brown Sugar
  1. 3 ripe Bananas (mashed)
  2. 2 tbsp Lemon Juice
  3. 2.5 cups all-purpose Flour
  4. 1/2 cup Cocoa
  5. 1.5 tsp Baking Soda
  6. 1/2 tsp Salt
  7. 1/2 cup Vegetable Oil
  8. 2 cups Brown Sugar
  9. 3 large Eggs
  10. 1 tbsp Vanilla Extract
  11. 1.5 cups Buttermilk
  12. 1/2 cup Chocolate Chips
  13. Glaze Ingredients (optional) – 1/4 cup Chocolate Chips + 3 tbsp milk

Directions:

  1. Heat the oven to 375 F
  2. Take a Bundt pan, and grease
  3. Mix the first two ingredients (1 – 2) in a small bowl
  4. Mix the next four ingredients (3 – 6) in a medium bowl
  5. Mix the next two ingredients (7 – 8) in a large bowl
  6. Mix the eggs (one at a time) into the large bowl (Oil + Brown Sugar), then add Vanilla and stir again
  7. Add half of the medium bowl, and half of the buttermilk into the large bowl and mix well.  Now add the rest of the flour mixture and buttermilk and mix again
  8. Add the small bowl (Bananas) and chocolate chips to the large bowl and fold in
  9. Pour the batter into the bundt pan, and bake for ~55 minutes until done
  10. Once cake is done, cool on rack
  11. If making glaze, add milk + chocolate chips in a microwaveable bowl and warm until melted, mix well, and pour over cake
